Roasted Paprika Chickpeas

I don’t usually write the cooking recipes on this blog and in fact this is my first one, but I felt that its totally worth including this recipe here, as it is so tasty and addictive. I am not usually the one for complicated cooking recipes and I absolutely love quick and healthy recipes.

These little beauties are like crunchy delights and with only a few ingredients you can totally make a great lunch or dinner. My little son absolutely loves it too and can literally sit and eat half of the tray in one go :).  They are perfect if like me you have a HUGE appetite and are always hungry , you can snack on these without feeling guilty .

To make you will need (Makes around  70 g )

240 g tinned chickpeas drained

1/2 tsp smoked paprika

1/4 tsp Himalayan Pink salt

1/2 tsp grated nutmeg ( fresh or dried)


To make:

Pre heat the oven to 170C and line a baking tray with parchment paper.

Mix all the ingredients together and transfer to prepared baking tray. Bake and preheated oven for about 50 minutes, until crunchy.

Remove from the oven and allow to cool. These little bad boys can be stored in an air tight container for up to a week, that it if you can retain from not eating them for that long.

And that is how easy it is to make them!
